Ingredients

4 medium zucchinis, sliced into ¼-inch rounds

2 cups cherry tomatoes, halved

1 cup feta cheese, crumbled

2 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon dried oregano

1 teaspoon dried thyme

1 teaspoon fresh basil, chopped (or ½ teaspoon dried basil)

Salt and freshly ground pepper, to taste

½ cup breadcrumbs (optional, for extra crunch)

¼ cup grated Parmesan cheese (optional, for an added flavor kick)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C) so it's ready for baking.

Prepare the Vegetables: In a large mixing bowl, combine the sliced zucchinis, halved cherry tomatoes, and minced garlic. Drizzle with the olive oil and evenly sprinkle the dried oregano, thyme, salt, and pepper over the vegetables. Gently toss everything together until all the vegetables are well coated in the oil and spices.

Layer the Bake: Lightly grease a medium-sized baking dish with a small amount of olive oil to prevent sticking. Spoon half of the zucchini and tomato mixture into the dish, spreading it out evenly. Crumble half of the feta cheese on top of the first layer. Repeat this layering process with the remaining vegetable mixture and the remaining feta. For added texture and flavor, feel free to sprinkle the top with breadcrumbs and a generous amount of grated Parmesan cheese.

Bake: Cover the baking dish tightly with aluminum foil and place it in the preheated oven. Bake for 25 minutes. After this time, carefully remove the foil and continue baking for an additional 15-20 minutes, or until the vegetables are tender and the top has developed a lovely golden brown color.

Add Fresh Herbs: Once the bake is finished in the oven, take it out and immediately sprinkle the chopped fresh basil on top for an invigorating burst of flavor.

Serve: Allow the dish to cool for a few minutes before serving. It can be enjoyed warm as a delightful side dish or a light vegetarian main course.
