Ingredients

1 pre-made pie crust (store-bought or homemade)

2 medium zucchinis, thinly sliced

1 cup cherry tomatoes, halved

1 small onion, finely chopped

3 large eggs

1 cup heavy cream (or substitute with milk for a lighter version)

1 cup shredded cheese (Gruyère or cheddar recommended)

1 teaspoon garlic powder

1 teaspoon dried thyme (or 1 tablespoon fresh thyme, finely chopped)

Salt and freshly ground black pepper, to taste

1 tablespoon olive oil

Fresh basil leaves, for garnish (optional)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C) to ensure it's hot enough for baking the quiche.

    Sauté the Vegetables:

      - Heat the olive oil in a large skillet over medium heat.

        - Add the finely chopped onion and sauté for about 3-4 minutes, until translucent and fragrant.

          - Incorporate the thinly sliced zucchini, garlic powder, dried thyme, salt, and pepper. Continue to cook for an additional 5-7 minutes, stirring occasionally, until the zucchini is tender yet still crisp.

            - Add the halved cherry tomatoes and cook for another 2 minutes. Once softened, remove the skillet from the heat and let the mixture cool slightly.

              Prepare the Egg Mixture:

                - In a large mixing bowl, whisk together the eggs and heavy cream (or milk) until the mixture is well combined and smooth.

                  - Fold in the shredded cheese, ensuring an even distribution throughout the mixture.

                    - Taste and adjust seasoning with salt and freshly ground black pepper if needed.

                      Combine Ingredients:

                        - Gently fold the sautéed vegetable mixture into the egg and cheese mixture. Ensure all ingredients are well-coated and distributed evenly.

                          Assemble the Quiche:

                            - Carefully place the pre-made pie crust into a pie dish, pressing it down to fit snugly.

                              - Pour the zucchini and egg filling into the crust, spreading it out evenly to ensure even cooking.

                                Bake:

                                  - Place the quiche in the preheated oven and bake for 35-40 minutes. The quiche is done when the center is set and the top is golden brown. You can test doneness by inserting a toothpick into the center; it should come out clean.

                                    Cool & Serve:

                                      - Once baked, remove the quiche from the oven and allow it to cool for about 10 minutes before slicing. This helps set the filling for easier serving.

                                        - If desired, garnish with fresh basil leaves for an added burst of flavor and color.

Enjoy: Serve the quiche warm or at room temperature. It pairs excellently with a fresh green salad or a vibrant fruit platter.
