Ingredients

2 medium zucchini

1 cup panko breadcrumbs (for that extra crunch)

1/2 cup freshly grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon Italian seasoning

1 large egg

1/2 cup all-purpose flour

Salt and pepper, to taste

Olive oil spray (or a few tablespoons of extra virgin olive oil)

Marinara sauce for dipping (optional)

Instructions

Preheat the Oven: Begin by preheating your oven to 425°F (220°C). Line a baking sheet with parchment paper to prevent sticking and make cleanup a breeze.

Prepare the Zucchini: Rinse the zucchini under cool water and pat them dry. Trim off both ends and cut each zucchini into thick sticks, about ¼ to ½ inch wide for optimal cooking.

Set Up the Breading Station: Create a breading station with three shallow bowls:

        - In the first bowl, combine the all-purpose flour with a generous pinch of salt and pepper.

          - In the second bowl, crack open the egg and beat it until well mixed.

            - In the third bowl, blend the panko breadcrumbs with grated Parmesan, garlic powder, Italian seasoning, and a touch more salt and pepper.

Bread the Zucchini: Take a zucchini stick and first coat it in the seasoned flour, shaking off any excess. Then, dip it into the beaten egg, allowing the excess to drip off. Finally, roll it in the breadcrumb mixture, ensuring the zucchini is thoroughly covered for maximum crunch.

Arrange on Baking Sheet: Lay the breaded zucchini sticks on the prepared baking sheet in a single layer, leaving some space between each. For an added crispy finish, lightly spray them with olive oil.

Bake to Perfection: Place the baking sheet in the oven and bake for 20-25 minutes. Flip the poppers halfway through baking to ensure they brown evenly, until they are golden and crispy.

Serve Warm: Once done, allow the zucchini poppers to cool for a minute or two. Serve them warm alongside marinara sauce for dipping, if you choose.
