Zucchini Feta Pasta Bake

300g (10.5 oz) pasta (penne or fusilli recommended)

2 medium zucchinis, thinly sliced

1 cup cherry tomatoes, halved

3 cloves garlic, minced

200g (7 oz) feta cheese, crumbled

1 cup fresh spinach, chopped

1 cup mozzarella cheese, shredded

1/4 cup olive oil

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper, to taste

Fresh basil leaves, for garnish (optional)

Instructions
 

Preheat your oven to 375°F (190°C) to prepare for baking.

    In a large pot, bring salted water to a boil and cook the pasta according to the package instructions until al dente. Once cooked, drain and set aside.

      In a spacious mixing bowl, combine the sliced zucchinis, halved cherry tomatoes, and minced garlic. Pour in the olive oil and sprinkle with dried oregano, dried basil, salt, and pepper. Toss everything together until evenly coated with the oil and seasonings.

        Gently fold the cooked pasta into the zucchini mixture. Add the crumbled feta cheese and chopped fresh spinach, mixing until all ingredients are well incorporated.

          Transfer the pasta and vegetable mixture into a greased baking dish (approximately 9x13 inches). Evenly sprinkle the shredded mozzarella cheese on top to create a delicious, cheesy layer.

            Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the top is golden brown and bubbly. For an extra crispy finish, you may broil it for an additional 2-3 minutes, keeping a close eye to prevent burning.
