2 medium zucchinis, grated

1 tablespoon olive oil

1 tablespoon unsalted butter

2 cloves garlic, minced

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

1 teaspoon fresh lemon juice

Salt and black pepper, to taste

¼ cup cream cheese, softened

¼ cup grated Parmesan cheese

Fresh basil leaves, for garnish (optional)

Prepare the Zucchini: Begin by thoroughly washing the zucchinis. Using a box grater or food processor, grate the zucchinis. Place the grated zucchini into a clean kitchen towel, twist the towel, and squeeze out excess moisture to ensure your spread doesn’t become watery.

    Cook the Zucchini: In a medium-sized skillet, add the olive oil and unsalted butter. Heat over medium heat until the butter melts and begins to bubble. Add the minced garlic and sauté for about 1 minute, or until the garlic becomes fragrant. Next, add the grated zucchini and thyme to the skillet. Cook while stirring occasionally for 5-7 minutes, or until the zucchini is tender and the moisture has mostly evaporated.

      Season it Up: Once cooked, remove the skillet from heat. Stir in the fresh lemon juice, along with salt and black pepper to taste. Set the mixture aside to cool slightly.
