2 medium zucchinis, grated

1 cup broccoli florets, finely chopped

1 cup shredded cheddar cheese

1/2 cup panko breadcrumbs (for extra crunch)

1/4 cup grated Parmesan cheese

2 large eggs, beaten

2 cloves garlic, minced

1 teaspoon onion powder

1 teaspoon dried oregano

1/2 teaspoon salt

1/4 teaspoon black pepper

Cooking spray or olive oil for greasing the baking sheet

Instructions
 

Preheat and Prep: Start by preheating your oven to 400°F (200°C). While it’s heating, line a baking sheet with parchment paper or lightly grease it using cooking spray or olive oil to prevent sticking.

    Prepare the Vegetables: Grate the zucchinis using a box grater and place the grated zucchini in a clean kitchen towel. Twist the towel to squeeze out as much excess moisture as you can; this step is essential to ensure the tots turn out crispy rather than soggy.

      Blanch the Broccoli: Bring a pot of water to a rolling boil, then add the finely chopped broccoli florets. Blanch them for 2-3 minutes until they’re bright green. After draining, immediately plunge the broccoli into an ice bath to halt the cooking process. Once cooled, drain again and chop finely.

        Mix Ingredients Together: In a large mixing bowl, combine the drained zucchini, blanched and chopped broccoli, shredded cheddar cheese, panko breadcrumbs, grated Parmesan, beaten eggs, minced garlic, onion powder, dried oregano, salt, and black pepper. Mix everything thoroughly until well combined.

          Shape the Tots: With clean hands, scoop out small portions of the mixture and shape them into bite-sized tots approximately 1.5 inches in length. Place these shaped tots on the prepared baking sheet, making sure they don’t touch.
