1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1/2 cup Italian-style breadcrumbs

2 large eggs, beaten

1 clove garlic, minced

1/2 teaspoon freshly ground black pepper

Preheat the Oven: Begin by preheating your oven to 425°F (220°C). While that's heating, prepare a baking sheet by lining it with parchment paper to prevent sticking.

    Prepare the Zucchini: Grate the zucchinis using a box grater or food processor. After grating, transfer the zucchini into a clean kitchen towel or cheesecloth. Twist the cloth to squeeze out as much excess moisture as possible, which is crucial for ensuring the bites become crispy.

      Mix the Ingredients: In a large mixing bowl, combine the drained zucchini with the shredded mozzarella, grated Parmesan, breadcrumbs, beaten eggs, minced garlic, dried oregano, sea salt, and black pepper. Using a spatula or your hands, mix the ingredients thoroughly until everything is well integrated.

        Form the Bites: With your hands, take approximately 1-2 tablespoons of the mixture and shape it into small patties about 1 inch thick. Arrange the patties on the lined baking sheet, ensuring there’s space between each one to allow for even cooking.
