For the Shrimp:

1 lb (450g) large shrimp, peeled and deveined

2 tablespoons olive oil

Zest of 1 lime

Juice of 2 limes

2 cloves garlic, minced

1 teaspoon honey or maple syrup

1 teaspoon chili powder

Salt and pepper, to taste

1 tablespoon fresh cilantro, chopped (for garnish)

For the Coconut Rice:

1 cup jasmine rice

1 cup coconut milk

1 cup water

1 tablespoon sugar

1/2 teaspoon salt

1/4 cup shredded coconut (toasted, for garnish)

For the Bowls:

1 cup cherry tomatoes, halved

1 avocado, sliced

1 cup mixed greens (arugula or spinach)

Lime wedges (for serving)

Instructions
 

Prepare the Coconut Rice:

    In a medium saucepan, combine 1 cup of jasmine rice, 1 cup of coconut milk, 1 cup of water, 1 tablespoon of sugar, and 1/2 teaspoon of salt. Bring the mixture to a rolling boil over medium-high heat. Once boiling, reduce the heat to low, cover the pot, and let it simmer gently for about 15 minutes or until the rice is cooked through and the liquid is absorbed. After cooking, fluff the rice with a fork, cover it again, and set aside to keep warm.

      Marinate the Shrimp:

        In a large mixing bowl, whisk together 2 tablespoons of olive oil, the zest and juice of 2 limes, 2 minced garlic cloves, 1 teaspoon of honey (or maple syrup), 1 teaspoon of chili powder, and a pinch of salt and pepper. Add the prepared shrimp to the bowl and toss well to ensure each piece is evenly coated in the marinade. Allow the shrimp to marinate for approximately 15 minutes to soak up all the delicious flavors.
