2 cups shredded cooked chicken (rotisserie chicken works best)

1 cup of your favorite BBQ sauce

1 cup sweet corn kernels (fresh, frozen, or canned)

1 cup shredded cheese (choose between cheddar, Monterey Jack, or a cheese blend)

1/2 cup diced red bell pepper

1/4 cup chopped green onions

1 teaspoon ground cumin

1 teaspoon smoked paprika

8 flour tortillas (whole wheat or regular)

Olive oil or cooking spray (for cooking)

Sour cream and salsa (for serving)

Instructions
 

Prep the Filling: In a medium-sized bowl, combine the shredded chicken, BBQ sauce, sweet corn, diced red bell pepper, chopped green onions, cumin, and smoked paprika. Stir the mixture well until all the ingredients are evenly coated with the BBQ sauce.

    Assemble the Quesadillas: On a clean, flat surface, lay out four tortillas. Evenly distribute the BBQ chicken and corn mixture onto each tortilla, making sure to cover the surface. Generously sprinkle shredded cheese over the filling, then place another tortilla on top of each to form a quesadilla.

      Cook the Quesadillas: Heat a large skillet over medium heat and drizzle in a bit of olive oil or coat the surface with cooking spray. Carefully place one quesadilla in the skillet. Cook for approximately 3-4 minutes, or until the bottom turns golden brown and the cheese starts to melt. Use a spatula to gently flip the quesadilla and cook the other side for another 3-4 minutes, until it is likewise golden and crisp.

        Repeat Cooking with Remaining Quesadillas: Once the first quesadilla is cooked, transfer it to a plate and slice it into wedges. Continue this process with the remaining quesadillas, adding additional olive oil or cooking spray to the pan as necessary.
