Zesty Baked Tacos with Ground Beef

1 pound ground beef

1 small onion, finely chopped

2 cloves garlic, minced

1 packet taco seasoning (or homemade: 1 tablespoon chili powder, 1 teaspoon cumin, 1 teaspoon paprika, 1 teaspoon onion powder, 1/2 teaspoon garlic powder, salt, and pepper to taste)

1 can (14 oz) diced tomatoes with green chilies, drained

1 cup black beans, rinsed and drained

1 cup corn (fresh, frozen, or canned)

1/2 cup fresh cilantro, chopped

12 taco shells (either hard or soft)

1 cup shredded cheese (cheddar or a Mexican blend)

Sour cream, for serving

Fresh lime wedges, for serving

Optional toppings: sliced jalapeños, diced avocado, salsa, shredded lettuce

Instructions
 

Preheat the Oven: Begin by preheating your oven to 350°F (175°C).

    Cook the Beef: In a large skillet set over medium heat, add the ground beef. Use a spatula to break it apart while cooking, allowing it to brown evenly. If necessary, drain any excess fat for a leaner filling.

      Sauté Vegetables: Once the beef is browned, incorporate the finely chopped onion and minced garlic into the skillet. Sauté for approximately 3-4 minutes, or until the onion is soft and translucent, emitting a delightful aroma.

        Add Seasoning: Next, sprinkle the taco seasoning over the beef mixture. Stir well to combine all the flavors. Add in the drained diced tomatoes, rinsed black beans, and corn along with half of the chopped cilantro. Mix thoroughly and continue to cook for an additional 3-5 minutes until the mixture is warmed through.

          Fill Taco Shells: Arrange the taco shells upright in a large baking dish or on a lined baking sheet. Generously spoon the beef mixture into each taco shell, ensuring they are comfortably filled.

            Top with Cheese: Evenly distribute the shredded cheese over each filled taco shell to create a cheesy topping.

              Bake: Transfer the baking dish or sheet to your preheated oven. Bake the tacos for about 15-20 minutes, or until the cheese is thoroughly melted and bubbly.
