Ingredients

2 racks baby back ribs (approximately 4-5 lbs)

1 cup whisky (bourbon is recommended)

1/2 cup apple cider vinegar

1/4 cup packed brown sugar

1/4 cup honey

1 tablespoon Worcestershire sauce

2 tablespoons Dijon mustard

1 tablespoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon freshly ground black pepper

1 teaspoon salt

1 teaspoon cayenne pepper (optional, for added heat)

Fresh herbs (like parsley or chives) for garnish

Instructions

Prepare the Ribs: Begin by removing the silver skin from the underside of the ribs to enhance flavor absorption. Rinse the ribs thoroughly under cold water and then pat them dry with paper towels to ensure they marinate properly.

Make the Marinade: In a large mixing bowl, whisk together the whisky, apple cider vinegar, brown sugar, honey, Worcestershire sauce, Dijon mustard, smoked paprika, garlic powder, onion powder, black pepper, salt, and optional cayenne pepper. Mix well until the sugar has dissolved completely.

Marinate the Ribs: Place the ribs in a large ziplock bag or a shallow dish, pouring half of the marinade over them. Ensure that the ribs are evenly coated in the marinade. Seal the bag or cover the dish tightly and refrigerate for a minimum of 4 hours, but for best results, marinate overnight to allow maximum flavor infusion.

Prepare the Grill: Preheat your grill to medium heat, aiming for a temperature around 300°F. If you're using a charcoal grill, set it up for indirect grilling by placing the coals on one side, leaving the other side free of coals.

Grill the Ribs: Once the grill is ready, remove the ribs from the marinade (discarding any remaining marinade). Position the ribs bone side down on the cooler side of the grill. Close the lid and allow the ribs to cook for approximately 1.5 to 2 hours, maintaining a steady temperature and turning the ribs occasionally for even cooking.

Glaze the Ribs: During the final 30 minutes of grilling, take the remaining marinade and brush it generously over the ribs every 10 minutes. This will create a beautiful glaze as it caramelizes, enhancing the overall flavor.

Final Check & Serve: After 1.5 to 2 hours, assess the doneness of the ribs. The meat should be tender and easily pulling away from the bone. Once done, remove the ribs from the grill and let them rest for about 10 minutes. Use a sharp knife to slice between the bones for serving. Garnish with freshly chopped herbs before presenting on the table.

Enjoy! Serve your succulent whisky-infused grilled baby back ribs alongside complementary sides such as coleslaw, cornbread, or baked beans for a complete meal.
