Turkey Skewers with Peach Salsa

For the Turkey Skewers:

1 lb ground turkey

1/2 cup breadcrumbs

1/4 cup grated Parmesan cheese

2 cloves garlic, minced

1 tsp smoked paprika

1 tsp dried oregano

1/2 tsp salt

1/4 tsp black pepper

1 egg, beaten

Skewers (if using wooden skewers, soak in water for 30 minutes)

For the Peach Salsa:

2 ripe peaches, diced

1/4 cup red onion, finely chopped

1 jalapeño, seeded and minced (adjust according to your spice preference)

1/4 cup fresh cilantro, chopped

Juice of 1 lime

Salt, to taste

Prepare the Turkey Mixture: In a large mixing bowl, combine the ground turkey, breadcrumbs, grated Parmesan cheese, minced garlic, smoked paprika, dried oregano, salt, black pepper, and the beaten egg. Mix thoroughly with your hands or a spatula until all ingredients are well incorporated and the mixture is uniform.

    Form the Skewers: Take small amounts of the turkey mixture and shape them around each skewer, gently pressing to form elongated pieces. Aim for about 4-5 evenly spaced pieces per skewer to ensure they cook evenly and thoroughly.

      Make the Peach Salsa: In a separate bowl, combine the diced ripe peaches, finely chopped red onion, minced jalapeño, and fresh chopped cilantro. Squeeze the juice of one lime over the ingredients and season with salt to taste. Stir this mixture gently until combined, then set it aside to allow the flavors to develop while you grill the skewers.

        Preheat the Grill: Preheat your grill to medium-high heat. If using an outdoor grill, ensure the grates are clean and well-oiled to prevent any sticking during grilling.

Turn the skewers occasionally to ensure even cooking on all sides.
