For the Tuna Filling:

2 cans (5 oz each) of high-quality tuna in olive oil, drained

1 tablespoon mayonnaise

1 teaspoon Dijon mustard

1 teaspoon hot sauce (adjust according to your heat preference)

1 tablespoon fresh cilantro, finely chopped

1/4 teaspoon garlic powder

Salt and black pepper to taste

Juice of 1/2 lime

For the Lime Slaw:

2 cups green cabbage, finely shredded

1 cup purple cabbage, finely shredded

1/2 cup carrots, finely grated

1/2 cup fresh cilantro, roughly chopped

Juice of 1 lime

1 tablespoon apple cider vinegar

1 tablespoon honey (or agave syrup for a vegan alternative)

Salt and black pepper to taste

For Assembling:

8 small corn or flour tortillas

Slices of avocado (optional, for extra creaminess)

Lime wedges for serving

Instructions

Prepare the Tuna Filling: In a medium mixing bowl, take the drained tuna and flake it with a fork. Add in the mayonnaise, Dijon mustard, hot sauce, chopped cilantro, garlic powder, and the juice of 1/2 lime. Season with salt and pepper to taste. Gently mix until all ingredients are thoroughly combined and well coated.

Make the Lime Slaw: In a large mixing bowl, combine the shredded green cabbage, purple cabbage, grated carrots, and chopped cilantro, mixing them together well. In a separate small bowl, whisk together the lime juice, apple cider vinegar, honey (or agave syrup), and a pinch of salt and pepper. Pour the dressing over the cabbage mixture and toss until the vegetables are evenly coated with the dressing.

Warm the Tortillas: Place a dry skillet over medium heat. Warm each tortilla for about 30 seconds on each side, or until they become pliable and slightly toasted, which enhances their flavor.

Assemble the Tacos: Take a warm tortilla and spoon a generous portion of the tuna filling onto the center. Top it with a handful of your tangy lime slaw. If you're adding avocado, lay a few slices on top for a delightful creamy texture.

Serve: Arrange the tacos on a serving platter and accompany with lime wedges on the side. Squeeze fresh lime juice over the tacos just before biting in for an extra zesty kick.
