Ingredients

4 large ripe tomatoes

1 can (5 oz) tuna in water, drained

1/4 cup mayonnaise

1/4 cup finely chopped celery

1/4 cup finely chopped red onion

1/2 teaspoon Dijon mustard

1/4 teaspoon garlic powder

Salt and pepper to taste

1 cup shredded sharp cheddar cheese, divided

1 tablespoon fresh parsley, finely chopped

Olive oil for drizzling

Instructions

Preheat Oven: Begin by preheating your oven to 375°F (190°C) to ensure it's ready for baking.

Prepare Tomatoes: Carefully cut the tops off each tomato and use a spoon to scoop out the insides, leaving about 1/2 inch of flesh intact so they hold their shape. Reserve the scooped pulp in a bowl for later use. Place the hollowed tomatoes upright in a baking dish.

Mix Filling: In a medium bowl, combine the drained tuna, mayonnaise, chopped celery, chopped red onion, Dijon mustard, garlic powder, and a pinch of salt and pepper. Stir until all the ingredients are well blended and creamy.

Incorporate Cheese and Parsley: Gently fold in half of the shredded cheddar cheese (1/2 cup) and the chopped parsley into the tuna mixture, making sure everything is evenly distributed.

Stuff Tomatoes: Using a spoon, carefully fill each hollowed tomato with the tuna mixture. Pack it lightly but firmly to maximize the filling without overstuffing.

Top with Cheese: Evenly sprinkle the remaining 1/2 cup of cheddar cheese on top of each stuffed tomato for that delicious melty finish.

Bake: Drizzle a small amount of olive oil over the stuffed tomatoes for added flavor and moisture. Place the baking dish in the preheated oven and bake for about 20-25 minutes, or until the tomatoes are tender and the cheese is melted and bubbly.

Serve: Once baked, remove the dish from the oven and allow the stuffed tomatoes to cool for a few minutes. Serve them warm as a delightful appetizer or light meal, garnished with additional parsley if desired.
