Truffle Mac and Cheese Bites

Mac and Cheese Base:

1 cup elbow macaroni

2 tablespoons unsalted butter

2 tablespoons all-purpose flour

1 cup whole milk

1 cup sharp cheddar cheese, grated

½ cup Gruyère cheese, grated

1 teaspoon Dijon mustard

Salt and freshly ground black pepper to taste

1 tablespoon truffle oil (adjust to your taste preference)

Breading:

1 cup panko breadcrumbs

½ teaspoon garlic powder

½ teaspoon onion powder

¼ teaspoon smoked paprika

Salt and freshly ground black pepper to taste

2 large eggs, beaten

½ cup all-purpose flour

For Frying:

Vegetable oil (enough for frying)

Instructions
 

Cook the Pasta:

    In a medium pot, bring salted water to a rolling boil. Add the elbow macaroni and cook according to the package instructions until al dente. Drain the pasta and set it aside.

      Make the Cheese Sauce:

        In a medium saucepan, melt the unsalted butter over medium heat. Once melted, whisk in the flour, cooking for about 1 minute to form a roux. Gradually whisk in the whole milk, stirring continuously until the mixture thickens and begins to bubble, approximately 5 minutes.

          Incorporate Cheeses and Flavorings:

            Remove the saucepan from heat and stir in the grated sharp cheddar and Gruyère cheeses until they melt and the sauce is smooth. Mix in the Dijon mustard, season with salt and pepper, and drizzle in the truffle oil, combining everything thoroughly. Gently fold in the cooked elbow macaroni until it is evenly coated with the cheese sauce.

              Chill the Mixture:

                Transfer the mac and cheese mixture into a baking dish, smoothing it out evenly. Cover the dish with plastic wrap and refrigerate for at least 1 hour, or until the mixture is firm enough to handle.

                  Prepare the Breading Station:

                    Set up three bowls: in the first bowl, place the all-purpose flour; in the second bowl, beat the eggs; and in the third bowl, combine panko breadcrumbs with garlic powder, onion powder, smoked paprika, and a sprinkle of salt and pepper.

                      Form the Bites:

                        Once the mac and cheese mixture is chilled and firm, scoop out small portions (about 1 tablespoon each) and roll them into bite-sized balls or press them into small patties.

                          Coat the Bites:

                            Take each mac and cheese bite and roll it in the flour to coat lightly, then dip it into the beaten eggs, and finish by coating well with the seasoned panko breadcrumbs. Ensure each bite is thoroughly covered for a crunchy finish.

                              Fry the Bites:

                                In a deep frying pan, heat vegetable oil over medium heat until hot. Carefully add the coated bites in small batches to the hot oil. Fry for about 3-4 minutes, turning occasionally, until they are golden brown and crispy. Use a slotted spoon to remove the bites and place them on paper towels to drain excess oil.
