Ingredients

8 ounces whole wheat spaghetti

2 medium zucchinis, either spiralized into noodles or sliced into thin rounds

2 cups cherry tomatoes, halved

3 cloves garlic, finely minced

1 tablespoon extra virgin olive oil

1 teaspoon dried oregano

1 teaspoon red pepper flakes (adjust based on heat preference)

Salt and freshly ground black pepper, to taste

Fresh basil leaves, for a vibrant garnish

Grated Parmesan cheese, for serving (optional)

Instructions

Cook the Pasta: Fill a large pot with water, season generously with salt, and bring it to a rolling boil. Once boiling, add the whole wheat spaghetti and cook according to the package instructions until it reaches an al dente texture. Before draining, reserve 1 cup of the starchy pasta water. Drain the spaghetti and set aside.

Sauté Vegetables: In a large skillet, heat the olive oil over medium heat. When the oil shimmers, add the minced garlic. Sauté for about 30 seconds, or until the garlic is fragrant but not browned, as burnt garlic can impart a bitter flavor.

Add Tomatoes and Zucchini: Toss in the halved cherry tomatoes along with the spiralized or sliced zucchini. Cook for 5-7 minutes, stirring occasionally, until the tomatoes begin to soften and release their juices, and the zucchini is tender yet still slightly crisp.

Season: Add the dried oregano, red pepper flakes (if using), and a sprinkle of salt and freshly ground black pepper to the vegetable mix. Stir well to ensure all the ingredients are evenly coated with the spices.

Combine Pasta and Veggies: Incorporate the cooked spaghetti into the skillet with the sautéed vegetables. Toss everything together gently, adding the reserved pasta water gradually until the mixture reaches your preferred sauce consistency. This will help to create a beautiful, cohesive dish.

Serve: Taste your creation and adjust the seasoning if necessary. Serve the pasta hot, garnished with fresh basil leaves for a punch of color and aroma. If desired, finish with a sprinkle of grated Parmesan cheese for added creaminess.
