2 cups cherry tomatoes, halved

1 large cucumber, diced into bite-sized pieces

1 ripe avocado, diced

1/4 red onion, finely chopped

1/4 cup fresh parsley, roughly chopped

2 tablespoons extra virgin olive oil

1 tablespoon freshly squeezed lemon juice

Salt and pepper, to taste

Optional: 1/4 cup feta cheese crumbles for garnish

Prepare the Vegetables: Begin by thoroughly washing the cherry tomatoes, cucumber, and parsley under cold water. Halve the cherry tomatoes lengthwise, and then dice the cucumber into bite-sized pieces. Finely chop the red onion. Set all the prepared vegetables aside in a large mixing bowl.

    Dice the Avocado: Carefully cut the avocado in half, remove the pit, and scoop out the flesh using a spoon. Place the avocado halves on a cutting board, dice them into small cubes, and gently add them to the bowl with the other vegetables.
