9 oz cheese tortellini (fresh or frozen)

1 cup cherry tomatoes, halved

1 cup fresh basil leaves, chopped

½ cup mozzarella balls (bocconcini), halved

¼ cup red onion, finely diced

¼ cup extra virgin olive oil

2 tbsp balsamic vinegar

1 tsp garlic powder

Salt and freshly ground black pepper, to taste

Optional: 1 tsp Italian seasoning

Freshly grated Parmesan cheese, for serving

Cook the Tortellini: In a large pot, bring salted water to a rolling boil. Add the cheese tortellini and cook according to the package instructions, generally about 3-4 minutes until they are al dente. Once cooked, carefully drain the tortellini and rinse them under cold water to halt the cooking process. Transfer them to a bowl and set aside.

    Prep the Vegetables: While the tortellini is cooking, rinse the cherry tomatoes and fresh basil leaves under cool water. Cut the cherry tomatoes in half and roughly chop the basil into bite-sized pieces, ensuring the flavors are released.

      Combine Ingredients: In a large mixing bowl, combine the cooked tortellini, halved cherry tomatoes, chopped basil, halved mozzarella balls, and finely diced red onion. Gently mix to incorporate all ingredients without breaking the tortellini.
