Ingredients

1 lb boneless, skinless chicken breast, cut into 1-inch cubes

1 cup fresh pineapple, cut into 1-inch chunks

1 large red bell pepper, cut into 1-inch pieces

1 large green bell pepper, cut into 1-inch pieces

1 medium red onion, cut into wedges

2 tablespoons olive oil

1/4 cup low-sodium soy sauce

2 tablespoons honey

1 tablespoon sriracha (adjust according to your spice preference)

1 tablespoon minced garlic

1 teaspoon ground ginger

1 tablespoon sesame seeds (for garnish)

Salt and pepper to taste

Skewers (if wooden, soak in water for 30 minutes)

Instructions

Marinate the Chicken: In a large mixing bowl, combine the olive oil, soy sauce, honey, sriracha, minced garlic, ground ginger, salt, and pepper. Whisk together until well blended. Add the chicken cubes to the bowl and stir gently to ensure each piece is evenly coated with the marinade. Cover the bowl with plastic wrap and place it in the refrigerator. Let the chicken marinate for a minimum of 30 minutes, or extend to 4 hours for enhanced flavor.

Assemble the Skewers: After marinating, take the skewers and start building your kabobs. Alternate threading the marinated chicken, pineapple chunks, red bell pepper pieces, green bell pepper pieces, and red onion wedges onto the skewers. Aim for a vibrant pattern for visual appeal, but avoid overcrowding each skewer to ensure even cooking.

Preheat the Grill: Heat your grill or grill pan over medium-high heat. To prevent sticking, lightly oil the grill grates with a brush or paper towel.

Grill the Kabobs: Carefully place the skewers on the preheated grill. Cook for approximately 10-12 minutes, turning the skewers every few minutes. The chicken should reach an internal temperature of 165°F and exhibit appealing grill marks. The pineapple and vegetables will soften and develop a slight char, enhancing their flavors.

Finish and Serve: Once cooked, remove the kabobs from the grill. Sprinkle sesame seeds over the freshly grilled kabobs for an extra touch of crunch and flavor. Serve the kabobs hot alongside a bed of fluffy rice or a refreshing salad to create a well-rounded meal.

              - Presentation Tips: Serve the kabobs on a large platter garnished with fresh herbs like cilantro or parsley for added color. You can also add lime wedges on the side for a zingy squeeze that complements the dish beautifully.
