Sweet Potato Quinoa Burgers

1 cup quinoa, thoroughly rinsed

2 medium sweet potatoes, peeled and cut into 1-inch cubes

1 can (15 oz) black beans, drained and rinsed

1/2 cup red onion, finely chopped

1/2 cup carrots, grated

2 cloves garlic, minced

1/2 cup breadcrumbs (choose whole wheat for a healthier option)

1 teaspoon ground cumin

1 teaspoon smoked paprika

1/2 teaspoon chili powder

Salt and pepper, to taste

2 tablespoons fresh cilantro or parsley, finely chopped (optional)

Olive oil, for frying

Burger buns and desired toppings (lettuce, avocado, tomato, etc.) for serving

Instructions
 

Cook the Quinoa: In a medium saucepan, combine the rinsed quinoa with 2 cups of water. Bring the mixture to a vigorous boil over medium-high heat. Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for around 15 minutes, or until all the water has been absorbed and the quinoa is fluffy. Remove from heat and allow it to cool slightly.

    Prepare the Sweet Potatoes: While the quinoa is cooking, either steam or boil the cubed sweet potatoes until fork-tender, about 10-15 minutes. Drain the sweet potatoes and transfer them to a large mixing bowl. Mash them well until smooth.

      Combine the Ingredients: To the bowl with the mashed sweet potatoes, add the black beans (slightly mashed for consistency), chopped red onion, grated carrots, minced garlic, cooked quinoa, breadcrumbs, ground cumin, smoked paprika, chili powder, salt, and pepper. If desired, fold in the chopped cilantro or parsley. Mix everything thoroughly until all ingredients are evenly combined.

        Form the Patties: Using clean hands, divide the mixture and shape it into patties, about 1/2 inch thick. Depending on the size, you should obtain approximately 8-10 burgers.

          Cook the Burgers: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Once the oil is hot, add the patties in batches, making sure not to overcrowd the pan. Cook each burger for 4-5 minutes on each side, or until they are golden brown and crispy. If necessary, add more olive oil for the subsequent batches.
