2 cups fresh sweet corn (kernels cut from approximately 3 ears of corn)

2 medium zucchinis, diced into bite-sized pieces

1 red bell pepper, diced

1 cup cherry tomatoes, halved

1/4 cup red onion, finely chopped

1/4 cup fresh cilantro, roughly chopped

1/4 cup feta cheese, crumbled (optional)

3 tablespoons extra-virgin olive oil

2 tablespoons fresh lime juice

1 teaspoon honey

Prepare the Corn: If you are using fresh corn, bring a pot of water to a boil. Add the corn kernels and cook for about 3-5 minutes until they are tender. Drain the corn and set it aside to cool. If using frozen corn, simply thaw it under cool running water or microwave until just warm.

    Sauté the Zucchini: In a non-stick skillet, heat 1 tablespoon of extra-virgin olive oil over medium heat. Add the diced zucchini and sauté for 3-4 minutes until the pieces are slightly softened yet still crisp. Remove the zucchini from the heat and allow it to cool.

      Combine Ingredients: In a large salad bowl, gently combine the cooled sweet corn, sautéed zucchini, red bell pepper, halved cherry tomatoes, and finely chopped red onion.

        Make the Dressing: In a small mixing bowl, whisk together the remaining 2 tablespoons of olive oil, fresh lime juice, honey, salt, and pepper. Taste the dressing and adjust the seasoning as desired.
