1 cup fresh sweet corn kernels (approximately 2 ears of corn)

1/2 cup all-purpose flour

1/4 cup cornmeal

1/4 cup milk

2 large eggs

1/4 cup finely chopped fresh chives

1 small red bell pepper, diced into small pieces

1/2 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper, to taste

2 tablespoons olive oil (for frying)

Optional: sour cream or yogurt for serving

Prepare the Corn: If you're using fresh corn, take a sharp knife and carefully cut the kernels away from the cob, collecting them in a bowl. If using frozen corn, ensure it is fully thawed and drained to avoid excess moisture.

    Mix the Dry Ingredients: In a large mixing bowl, combine the all-purpose flour, cornmeal, baking powder, baking soda, garlic powder, onion powder, salt, and pepper. Whisk the ingredients together until they are evenly blended and no lumps remain.

      Combine Wet Ingredients: In a separate bowl, crack the eggs and beat them lightly. Add the milk, then mix in the finely chopped chives and diced red bell pepper until well incorporated.

        Combine Mixtures: Gradually pour the wet mixture into the dry ingredients, gently folding them together with a spatula or wooden spoon. Once combined, gently fold in the fresh sweet corn until it is evenly distributed throughout the batter. The consistency should be thick yet spoonable.

          Heat the Oil: Place a large skillet over medium heat and add the olive oil. Heat the oil until it shimmers, indicating it's ready for frying.

            Fry the Fritter Cakes: Using a measuring cup or a large spoon, scoop around 1/4 cup of the batter for each fritter and carefully drop it into the hot skillet.
