1 cup Medjool dates, pitted

1 cup raw almonds (or your favorite nuts)

1/2 cup unsweetened cocoa powder

1/4 cup coconut flour (or finely shredded unsweetened coconut)

1 teaspoon pure vanilla extract

1/4 teaspoon sea salt

1/3 cup dark chocolate chips (choose vegan if preferred)

2 tablespoons coconut oil (or any neutral oil)

Optional toppings: crushed nuts, cocoa powder, shredded coconut, or chia seeds

Instructions
 

Prepare the Dates and Nuts: In a food processor, combine the pitted Medjool dates and raw almonds. Pulse the mixture until it is finely chopped and well blended, creating a sticky and cohesive substance.

    Mix the Ingredients: To the date and almond mixture, add the unsweetened cocoa powder, coconut flour, vanilla extract, and sea salt. Process again until all ingredients are thoroughly combined into a cohesive dough. If the mixture feels too dry or crumbly, add a teaspoon of water or a few more dates until it holds together well.

      Chill the Mixture: Transfer the mixture to a bowl, cover it tightly with plastic wrap, and refrigerate for about 30 minutes. Chilling helps the mixture firm up, making it easier to shape into truffles.

        Melt the Chocolate: While the mixture chills, prepare the chocolate coating. Place the dark chocolate chips and coconut oil in a microwave-safe bowl. Microwave in 30-second intervals, stirring in between each interval, until the chocolate is completely melted and smooth. Be careful not to overheat it.

          Form the Truffles: Once the chilled mixture is firm, take small portions (approximately 1 tablespoon each) and roll them into balls using your palms. Place each formed truffle onto a parchment-lined baking sheet.
