1 lb (450g) carrots, peeled and sliced into 1/4-inch thick coins

2 tablespoons extra virgin olive oil

1 teaspoon dried thyme (or 1 tablespoon fresh thyme, finely chopped)

1 teaspoon dried rosemary (or 1 tablespoon fresh rosemary, finely chopped)

1 teaspoon garlic powder

Salt and freshly ground black pepper, to taste

2 tablespoons fresh parsley, chopped (for garnish)
