1/4 cup red onion (finely chopped)

2 cloves garlic (minced)

1/2 cup fresh spinach (chopped)

1 tsp dried oregano

1 tsp dried basil

1/2 tsp red pepper flakes (optional, for heat)

Salt and pepper to taste

2 tbsp olive oil

1/4 cup feta cheese (crumbled, for garnish)

Fresh basil leaves (for garnish)

Instructions
 

Cook the Chicken: In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Season the chicken breasts generously with salt, pepper, and dried oregano on both sides. Carefully place the chicken in the hot skillet and cook for 5-7 minutes per side, or until the chicken is golden brown and cooked through (ensuring the internal temperature reaches 165°F). Once done, remove the chicken from the skillet and set it aside to rest.

    Sauté Aromatics: In the same skillet, lower the heat to medium. Add the finely chopped red onion and sauté for 2-3 minutes, until it becomes soft and translucent. Next, add the minced garlic and red pepper flakes (if using) to the skillet and cook for an additional 30 seconds, stirring continuously until the garlic is fragrant.

      Prepare Couscous: In a medium saucepan, bring 2 cups of chicken broth to a rolling boil over high heat. Once boiling, remove the pot from heat and stir in the couscous.
