Ingredients

1 cup (2 sticks) unsalted butter, melted

1 ½ cups packed brown sugar

2 large eggs

1 teaspoon vanilla extract

Zest of 1 lemon

2 cups all-purpose flour

½ teaspoon baking powder

½ teaspoon baking soda

¼ teaspoon salt

1 cup fresh strawberries, hulled and chopped

½ cup white chocolate chips (optional)

½ cup powdered sugar (for frosting, optional)

1 tablespoon lemon juice (for frosting, optional)

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Prepare a 9x13 inch baking pan by greasing it lightly and lining it with parchment paper, ensuring there’s an overhang for easy removal afterward.

Mix Wet Ingredients: In a large mixing bowl, pour in the melted butter and add the packed brown sugar. Whisk together until the mixture is smooth and well combined. Add each egg one at a time, mixing thoroughly after each addition. Stir in the vanilla extract and the freshly grated lemon zest until evenly distributed.

Combine Dry Ingredients: In a separate bowl, sift together the all-purpose flour, baking powder, baking soda, and salt. This helps to evenly distribute the leavening agents and eliminates clumps.

Combine Mixtures: Gradually introduce the dry mixture to the wet ingredients, using a spatula to fold them together. Stir gently until just combined; be careful not to overmix, as this can make the blondies dense.

Fold in Strawberries: Gently add the chopped strawberries and white chocolate chips (if using) to the batter. Use a spatula to fold them in until they are uniformly incorporated, but remain careful not to crush the strawberries.

Bake: Pour the completed batter into your prepared baking pan, spreading it evenly into the corners. Place in your preheated oven and bake for 25-30 minutes. The blondies are done when the edges are lightly golden and a toothpick inserted into the center comes out clean.

Cool: After baking, remove the pan from the oven and let cool in the pan for about 15 minutes. Carefully lift the blondies out by grasping the parchment overhang, and transfer them to a wire rack to cool completely.

Optional Frosting: If you choose to add a frosting, combine the powdered sugar and lemon juice in a small bowl. Mix until you achieve a smooth, drizzle-able consistency. Once the blondies are cooled, drizzle or spread the frosting on top for an extra sweet touch.

Slice and Serve: Cut the cooled blondies into squares or rectangles, arrange them on a serving platter, and enjoy the delightful burst of strawberry and lemon flavors!
