Ingredients

1 pound baby carrots (or alternatively, peeled and sliced regular carrots)

2 tablespoons extra virgin olive oil

3 tablespoons honey

2 tablespoons Sriracha sauce (adjust according to your preferred spice level)

1 tablespoon low-sodium soy sauce

1 clove garlic, finely minced

1 teaspoon fresh ginger, peeled and grated

1 tablespoon sesame seeds (for garnish)

Fresh cilantro leaves or finely chopped green onions (for garnish)

Salt and pepper to taste

Instructions

Prepare the Carrots:

    - If using regular carrots, start by peeling them and cutting them into evenly sized sticks (about ¼ inch thick for uniform cooking). If you opted for baby carrots, simply rinse them under cool water and set them aside.

      Create the Glaze:

        - In a small mixing bowl, combine the olive oil, honey, Sriracha, soy sauce, minced garlic, and grated ginger. Whisk the mixture thoroughly until all ingredients are well blended. Taste the glaze and adjust the spice by adding more Sriracha or sweetness by adding additional honey if preferred.

          Sauté the Carrots:

            - Heat a large skillet over medium heat. Add the prepared carrots to the skillet and pour the prepared glaze over them. Using tongs or a spatula, gently toss the carrots to ensure they are evenly coated in the glaze.

              Cook Until Tender:

                - Allow the carrots to cook in the skillet for approximately 10 to 12 minutes. Stir occasionally to promote even cooking. If the carrots are not softening as desired, cover the skillet with a lid for a few minutes to create steam. Once they reach your preferred tenderness, uncover the skillet to allow the glaze to thicken and caramelize slightly.

                  Season to Taste:

                    - Once your carrots are perfectly tender and glazed, taste them and season with salt and pepper according to your preference.

                      Plate and Garnish:

                        - Carefully transfer the glazed carrots to a serving dish. Sprinkle sesame seeds over the top for a delightful crunch, and add a garnish of fresh cilantro leaves or chopped green onions for a burst of color and flavor.

                          Serve and Enjoy:

                            - Serve the warm, spicy-sweet glazed carrots as a delicious side dish paired with your choice of main courses.
