Spinach Artichoke Air Fryer Quesadillas

1 cup fresh spinach, chopped

1 can (14 oz) artichoke hearts, drained and roughly chopped

1 cup cream cheese, softened to room temperature

1/2 cup sour cream

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

4 large flour tortillas

Cooking spray or a light drizzle of olive oil

Instructions
 

In a large mixing bowl, add the chopped spinach, drained artichoke hearts, softened cream cheese, sour cream, shredded mozzarella, and grated Parmesan. Use a spatula to mix everything together until all ingredients are well blended and the mixture is creamy.

    Season the mixture with garlic powder, onion powder, salt, and pepper. Stir well to ensure the seasoning is evenly distributed, tasting and adjusting as needed for a flavor that suits your palate.

      Preheat your air fryer to 380°F (193°C), allowing it to heat up while you prepare the quesadillas.

        Take one flour tortilla and lay it flat on a clean surface. Spoon a generous amount of the spinach and artichoke mixture onto one half of the tortilla. Use the back of the spoon to spread the filling evenly across that half. Carefully fold the other half of the tortilla over the filling to form a half-moon shape.

          Lightly coat the air fryer basket with cooking spray or brush with a small amount of olive oil to prevent sticking. Place the folded quesadilla in the basket, taking care not to overcrowd it. If needed, prepare them in batches.

            Air fry the quesadilla for about 5-7 minutes, flipping it halfway through the cooking time. Continue until the tortilla is golden brown and crispy on both sides.

              Once done, use tongs to carefully remove the quesadilla from the air fryer. Let it cool for a minute, then slice into wedges for easier serving.

                Repeat the process with the remaining tortillas and filling mixture to make additional quesadillas.
