2 cups fresh spinach, finely chopped

1 cup ricotta cheese

1 cup shredded mozzarella cheese (divided)

1/2 cup grated Parmesan cheese (divided)

1 large egg, lightly beaten

2 cloves garlic, minced

1 teaspoon Italian seasoning

Salt and freshly ground black pepper, to taste

2 cups marinara sauce

Fresh basil leaves, for garnish (optional)

Preheat the Oven: Start by preheating your oven to 375°F (190°C) to ensure it reaches the perfect temperature by the time your manicotti are ready to bake.

    Cook the Pasta: In a large pot, bring salted water to a rolling boil. Carefully add the manicotti shells and cook them for about 7-8 minutes, or just until al dente. Make sure not to overcook, as they'll continue to cook in the oven. Once done, drain the shells and set them aside to cool slightly.

      Prepare the Filling: In a large mixing bowl, combine the finely chopped fresh spinach, ricotta cheese, half of the shredded mozzarella cheese, half of the grated Parmesan cheese, the beaten egg, minced garlic, Italian seasoning, salt, and pepper. Using a fork or spatula, mix everything together until the ingredients are thoroughly combined and creamy.
