Ingredients

12 oz (340g) pasta (penne or fusilli)

1 tablespoon olive oil

3 cloves garlic, minced

1 cup onion, diced (about 1 medium onion)

1 cup frozen spinach, thawed and well-drained

1 can (14 oz) artichoke hearts, drained and chopped

1 cup ricotta cheese

1 cup cream cheese, softened to room temperature

1 cup shredded mozzarella cheese, divided

½ cup grated Parmesan cheese, divided

1 teaspoon lemon juice

½ teaspoon red pepper flakes (optional for heat)

Salt and freshly ground black pepper to taste

½ cup breadcrumbs (for topping)

Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Start by preheating your oven to 350°F (175°C). Grease a 9x13 inch baking dish with cooking spray or a bit of olive oil to prevent sticking.

Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to the package instructions until al dente, usually about 8-10 minutes. Once cooked, drain the pasta and set it aside.

Sauté Aromatics: Heat a large skillet over medium heat and add the olive oil. After a moment, add the minced garlic and diced onion. Sauté for about 3-4 minutes until fragrant and the onions become translucent.

Combine Spinach and Artichokes: Stir in the thawed spinach and chopped artichoke hearts into the skillet. Cook for another 2-3 minutes until everything is heated through and combined.

Prepare the Cheese Mixture: In a separate large bowl, combine the ricotta cheese, cream cheese, ¾ cup of the shredded mozzarella cheese, and ¼ cup of the grated Parmesan cheese. Mix together until the cheese is smooth and creamy. Then, add the lemon juice, red pepper flakes (if using), and season generously with salt and pepper.

Fold Together: Gently fold the cooked pasta and the spinach-artichoke mixture into the cheese mixture. Stir until all pasta and vegetables are well coated and evenly mixed.

Transfer to Baking Dish: Pour the mixture into your prepared baking dish. Spread it out evenly with a spatula to ensure it cooks uniformly.

Add Toppings: Sprinkle the remaining mozzarella cheese, the rest of the grated Parmesan cheese, and the breadcrumbs evenly over the top of the pasta bake for a crunchy finish.

Bake: Place the dish in the preheated oven and bake for 25-30 minutes, or until the top is golden brown and bubbly. You may want to check towards the end to prevent over-browning.

Garnish and Serve: Once baked, remove the dish from the oven and let it cool for a few minutes. Before serving, garnish with freshly chopped parsley for a pop of color and freshness.

                      Prep Time: 15 mins | Total Time: 50 mins | Servings: 6-8

                        - Presentation Tips: Serve directly from the baking dish or in individual portions for a rustic look. A sprinkle of additional parsley and a drizzle of olive oil can enhance the presentation. Enjoy your creamy and comforting pasta bake!
