1 cup sushi rice

1 ¼ cups water

2 tablespoons rice vinegar

1 tablespoon sugar

½ teaspoon salt

8 oz sushi-grade tuna, diced into small cubes

2 tablespoons mayonnaise (preferably Kewpie for authentic flavor)

1 tablespoon sriracha (adjust according to your spice preference)

1 teaspoon sesame oil

1 tablespoon green onions, finely chopped

Salt, to taste

For the Avocado Layer:

1 ripe avocado, mashed until smooth

1 teaspoon lime juice

Salt and pepper, to taste

For Assembly:

1 sheet of nori, cut into squares (optional for added flavor and texture)

Sesame seeds, for garnish

Additional finely chopped green onions, for garnish

Soy sauce, for serving

Instructions
 

Prepare the Sushi Rice:

    - Rinse 1 cup of sushi rice under cold water until the water runs clear to remove excess starch.

      - In a medium saucepan, combine the rinsed rice and 1 ¼ cups of water. Bring to a boil over medium-high heat.

        - Once boiling, reduce the heat to low, cover, and simmer for 18-20 minutes, or until the rice is tender and the water is fully absorbed. Remove from heat and let it sit covered for an additional 10 minutes to allow the rice to steam.

          - In a small bowl, whisk together the rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the cooked rice using a spatula, being careful not to mash the rice grains. Allow the rice to cool to room temperature.

            Make the Spicy Tuna:

              - In a mixing bowl, combine the diced sushi-grade tuna, mayonnaise, sriracha, sesame oil, and finely chopped green onions. Season with salt to taste. Mix gently to maintain the integrity of the tuna pieces. Cover and refrigerate until you're ready to assemble the sushi stack.

                Prepare the Avocado Layer:

                  - In a separate bowl, mash the ripe avocado until smooth and creamy. Add 1 teaspoon of lime juice and season with salt and pepper to taste. Mix well and set aside.
