1 block (14 oz) firm tofu, thoroughly drained and pressed

2 tablespoons cornstarch

2 tablespoons vegetable oil (or your preferred cooking oil)

3 cloves garlic, finely minced

1/4 cup pure maple syrup

2 tablespoons soy sauce (substitute with tamari for a gluten-free option)

1 tablespoon sriracha sauce (adjust to your spice preference)

1 teaspoon smoked paprika

1/2 teaspoon freshly ground black pepper

1 tablespoon sesame seeds (for garnish)

2 green onions, finely sliced (for garnish)

Instructions
 

Prepare the Tofu: Begin by cutting the pressed tofu into bite-sized cubes, approximately 1 inch each. Place the tofu cubes into a bowl and sprinkle the cornstarch over them. Gently toss the cubes until they are evenly coated in cornstarch, which will help create a deliciously crispy texture when cooked.

    Cook the Tofu: Heat the vegetable oil in a large non-stick skillet over medium-high heat. Once the oil is shimmering, carefully add the tofu cubes in a single layer, ensuring they are not overcrowded in the pan. Allow them to cook undisturbed for about 4-5 minutes, or until they reach a golden brown and crispy consistency. Flip the cubes and allow the other side to cook until equally golden and crispy. Once done, use a slotted spoon to remove the tofu from the skillet and set it aside on a plate.

      Prepare the Garlic Glaze: In the same skillet, reduce the heat to medium and add the minced garlic. Sauté the garlic for about 30 seconds, stirring constantly, until it becomes fragrant—be vigilant to avoid burning it, as burnt garlic can turn bitter.

        Mix the Glaze Ingredients: In a small mixing bowl, whisk together the maple syrup, soy sauce, sriracha, smoked paprika, and black pepper until well combined. Pour this flavorful mixture into the skillet with the sautéed garlic and stir thoroughly to combine the ingredients.

          Glaze the Tofu Bites: Return the crispy tofu bites to the skillet and gently toss them in the glaze, ensuring each piece is well-coated. Allow everything to cook for another 2-3 minutes, or until the sauce thickens slightly and clings beautifully to the tofu.
