Ingredients

1 lb ground turkey

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1-2 chipotle peppers in adobo sauce, finely chopped (adjust based on spice preference)

1 teaspoon smoked paprika

1 teaspoon ground cumin

Salt and pepper to taste

1 cup shredded sharp cheddar cheese

1 cup shredded Monterey Jack cheese

4 large flour tortillas

1/2 cup fresh cilantro, chopped (for garnish)

Sour cream and salsa (for serving)

Instructions

Cook the Turkey: In a large skillet, heat the olive oil over medium heat. Once hot, add the finely chopped onion and sauté for about 5 minutes until it becomes translucent. Introduce the minced garlic and cook for an additional minute, allowing the flavors to meld.

Add Spices and Chipotle: Stir the ground turkey into the skillet, using a wooden spoon to break it into smaller pieces. Mix in the finely chopped chipotle peppers, smoked paprika, ground cumin, salt, and pepper. Continue cooking until the turkey is browned and fully cooked through (about 8-10 minutes). Once done, remove the skillet from heat and allow the mixture to cool slightly.

Prepare the Tortillas: While the turkey mixture cools, arrange the flour tortillas in a flat workspace. On one half of each tortilla, generously sprinkle a mix of cheddar and Monterey Jack cheese for a creamy base.

Fill the Quesadilla Pockets: Using a spoon, evenly distribute the turkey mixture over the cheesy side of each tortilla half. For an extra gooey experience, add a bit more cheese on top of the turkey before carefully folding each tortilla over to form a half-moon shape.

Cook the Quesadilla Pockets: In the same skillet (adding a touch more olive oil if needed), place the folded quesadilla pockets seam side down. Cook for about 3-4 minutes on each side, or until they are golden brown and crispy, ensuring the cheese has melted beautifully inside.

Serve: Once cooked, remove the quesadilla pockets from the skillet and let them rest for a minute before cutting each pocket into thirds. Garnish with freshly chopped cilantro and serve warm with sour cream and salsa on the side for delightful dipping.
