1 cup dried green or brown lentils, thoroughly rinsed

1 medium onion, finely chopped

2 cloves garlic, minced

1 carrot, peeled and diced

1 stalk celery, diced

2 tablespoons extra virgin olive oil

1 teaspoon ground turmeric

1 teaspoon ground cumin

1/2 teaspoon smoked paprika

1/4 teaspoon cayenne pepper (adjust according to your spice preference)

6 cups vegetable broth or water

1 can (14 oz) diced tomatoes, including the juice

Salt and freshly ground black pepper, to taste

Juice of 1 fresh lemon

Fresh cilantro or parsley, chopped, for garnish

Instructions
 

Sauté Aromatics: In a large pot, heat the olive oil over medium heat. Once hot, add the finely chopped onion and sauté for 5-7 minutes, or until it turns translucent and soft. Next, incorporate the minced garlic along with the diced carrot and celery. Continue to cook for an additional 3-4 minutes, stirring occasionally, until the vegetables are tender.

    Add Spices: Stir in the ground turmeric, cumin, smoked paprika, and cayenne pepper. Allow the mixture to cook for 1-2 minutes, stirring frequently, until the spices release their wonderful aromas.

      Combine Lentils & Tomatoes: Gently fold the rinsed lentils into the pot, followed by the diced tomatoes along with their juices. Stir well to ensure all ingredients are thoroughly combined.

        Simmer the Soup: Pour in the vegetable broth (or water) and increase the heat to bring the mixture to a boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 25-30 minutes or until the lentils are tender and cooked through.

          Season and Finish: Once the lentils are cooked, taste the soup and adjust seasoning with salt and freshly ground black pepper as desired. Stir in the fresh lemon juice to brighten the flavors and enhance the soup's overall taste.
