Spiced Sweet Potato Lentil Stew

2 medium sweet potatoes, peeled and cut into 1-inch dice

1 cup green or brown lentils, rinsed under cold water

1 large yellow onion, finely chopped

3 cloves garlic, minced

2 medium carrots, diced

2 celery stalks, diced

1 can (14 oz) diced tomatoes, including the juices

4 cups vegetable broth (low-sodium preferred)

1 can (14 oz) coconut milk, stirred well

2 tablespoons extra virgin olive oil

2 teaspoons ground cumin

1 teaspoon ground coriander

1 teaspoon smoked paprika

1/2 teaspoon ground cinnamon

Salt and freshly cracked black pepper, to taste

Fresh cilantro leaves, for garnish

Juice of 1 lime, freshly squeezed

Sauté Aromatics: In a large heavy-bottomed pot or Dutch oven, heat the olive oil over medium heat. Once the oil shimmers, add the chopped onion. Cook, stirring occasionally, for about 5 minutes or until the onion becomes translucent and slightly golden. Add the minced garlic and sauté for an additional minute until fragrant.

    Add Vegetables: Introduce the diced sweet potatoes, carrots, and celery into the pot. Sauté the mixture for about 5 to 7 minutes, stirring occasionally to help soften the vegetables.
