1 lb ground turkey

1 can (15 oz) black beans, rinsed and drained

1 cup corn kernels (fresh, frozen, or canned)

1 red bell pepper, diced

1 small red onion, diced

2 cloves garlic, minced

1 teaspoon chili powder

1 teaspoon ground cumin

1/2 teaspoon smoked paprika

Salt and pepper to taste

4 large whole wheat tortillas

1 cup shredded lettuce

1 1/2 cups shredded cheese (cheddar or pepper jack)

1 ripe avocado, sliced

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Cook the Turkey: In a large skillet over medium heat, add the ground turkey. Cook for approximately 6-8 minutes, breaking it apart with a spatula as it browns. Ensure the turkey is fully cooked and no longer pink.

    Add Aromatics: Once the turkey is cooked through, add the diced red onion and minced garlic to the skillet. Sauté for 2-3 minutes or until the onion is translucent and fragrant.

      Spice it Up: Stir in the chili powder, ground cumin, smoked paprika, salt, and freshly cracked black pepper. Mix well, allowing the spices to blend with the turkey for about 1 minute.

        Combine Ingredients: Next, add the drained black beans, corn, and diced red bell pepper to the skillet. Cook for another 3-4 minutes, stirring occasionally to ensure everything is heated through and the flavors meld beautifully. Remove the mixture from heat.
