Ingredients

4 medium-sized russet potatoes, thinly sliced

1 cup sour cream

1 cup shredded sharp cheddar cheese

1 large onion, thinly sliced

3 tablespoons butter

2 cloves garlic, minced

1 teaspoon salt (adjust to taste)

½ teaspoon black pepper

1 teaspoon onion powder

1 teaspoon garlic powder

1 cup crushed French fried onions (for topping)

Fresh chives, finely chopped (for garnish)

Instructions

Preheat Oven: Begin by preheating your oven to 375°F (190°C) to ensure it’s at the right temperature when your casserole is ready to bake.

Sauté Onions: In a large skillet, melt the butter over medium heat. Add the thinly sliced onions and cook, stirring occasionally, until they become soft and caramelized, about 10-15 minutes. Once the onions are caramelized, stir in the minced garlic and cook for another 1-2 minutes until fragrant. Remove from heat and allow the mixture to cool slightly.

Mix Sauce: In a mixing bowl, combine the sour cream, shredded cheddar cheese, onion powder, garlic powder, salt, and black pepper. Stir well until all ingredients are thoroughly blended into a creamy mixture.

Layer Potatoes: Grease a 9x13 inch baking dish with a bit of butter or cooking spray. Begin by layering half of the sliced potatoes evenly across the bottom of the dish.

Add Toppings: Spread half of the prepared sour cream mixture over the potatoes, ensuring an even layer. Next, add half of the sautéed onions. Repeat the process with the remaining sliced potatoes, followed by the rest of the sour cream mixture, and finish by layering the remaining sautéed onions on top.

Bake: Cover the baking dish tightly with aluminum foil and place it in the oven. Bake for 45 minutes. After this time, carefully remove the foil and sprinkle the crushed French fried onions over the top. Continue baking uncovered for an additional 15-20 minutes, or until the potatoes are tender and the top is golden brown and crispy.

Let It Rest: Once the casserole is finished baking, remove it from the oven and let it sit for about 10 minutes. This resting period will help the casserole set, making it easier to serve.

Garnish: Just before serving, sprinkle the casserole with finely chopped fresh chives for an added burst of flavor and a beautiful pop of color.
