Ingredients

4 pounds pork shoulder (also known as pork butt)

1 tablespoon olive oil

1 cup onion, finely chopped

4 cloves garlic, minced

1 cup barbecue sauce (your favorite brand)

1/2 cup apple cider vinegar

1/2 cup chicken broth

1 tablespoon brown sugar

1 tablespoon Worcestershire sauce

1 tablespoon smoked paprika

1 teaspoon ground cumin

1 teaspoon chili powder

1 teaspoon salt

1/2 teaspoon black pepper

6 hamburger buns

Coleslaw (for topping, optional)

Instructions

Prep the Pork: Start by trimming any excess fat from the pork shoulder. Then, pat the meat dry with paper towels to ensure the seasoning adheres well.

Sear the Pork: In a large skillet, heat the olive oil over medium-high heat. Once hot, add the pork shoulder and sear it on all sides until beautifully browned, about 4-5 minutes per side. This step is optional but will deepen the flavor of your pulled pork.

Caramelize Onions & Garlic: Using the same skillet, add the finely chopped onions and sauté for about 2-3 minutes until they become soft and translucent. Next, add the minced garlic and continue to sauté for an additional minute until fragrant. Remove from heat and set aside.

Mix the Sauce: In a mixing bowl, whisk together the barbecue sauce, apple cider vinegar, chicken broth, brown sugar, Worcestershire sauce, smoked paprika, ground cumin, chili powder, salt, and black pepper until fully combined.

Combine Ingredients in Slow Cooker: Place the seared pork shoulder into the slow cooker. Top the pork with the sautéed onions and garlic, then pour the prepared barbecue sauce mixture evenly over the top.

Cook Low and Slow: Cover the slow cooker and set it to cook on low for 8 hours, or on high for 4 hours. The pork is done when it can be easily shredded with a fork.

Shred the Pork: Once the cooking time is complete, carefully remove the pork from the slow cooker and transfer it to a cutting board. Use two forks to shred the meat, then return the shredded pork to the slow cooker, mixing it thoroughly with the flavorful juices.

Prepare the Buns: Lightly toast the hamburger buns before serving. For extra richness, spread a thin layer of butter on each bun and give them a quick toast under the broiler until golden.

Assemble the Sandwiches: Generously pile the pulled pork mixture onto the bottom half of each toasted bun. If desired, add a topping of coleslaw for added crunch and flavor, then place the top bun on each sandwich.

Serve: Enjoy your smoky sweet pulled pork sandwiches while they are warm. Feel free to offer additional barbecue sauce on the side for those who desire extra flavor.
