4 cups vegetable broth

1 cup heavy cream

1 medium onion, finely chopped

16 oz (450g) mushrooms (cremini or button), sliced

1 cup grated Parmesan cheese

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 tablespoon olive oil

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Sauté the Aromatics: Heat the olive oil in a skillet over medium heat. Once the oil shimmers, add the finely chopped onion. Sauté for about 4-5 minutes or until the onion becomes translucent. Stir in the minced garlic and continue to cook for an additional minute, or until fragrant.

    Prepare the Mushrooms: Add the sliced mushrooms to the skillet. Cook, stirring occasionally, for 6-8 minutes, or until the mushrooms are tender and browned. Season them with salt, pepper, dried thyme, and dried rosemary to enhance their flavor.

      Combine in Slow Cooker: Transfer the sautéed mushroom mixture into your slow cooker. Add the Arborio rice and mix thoroughly to ensure even distribution of ingredients.
