Simple One-Pan Lemon Garlic Shrimp and Quinoa

1 cup quinoa, rinsed and drained

2 cups vegetable or chicken broth

1 pound large shrimp, peeled and deveined

3 tablespoons olive oil, divided

4 cloves garlic, minced

Zest and juice of 1 large lemon

1 teaspoon smoked paprika

1 teaspoon dried oregano

Salt and pepper to taste

1 cup cherry tomatoes, halved

1/4 cup fresh parsley, finely chopped

Lemon wedges for serving

Cook the Quinoa: In a medium saucepan, combine the rinsed quinoa and broth. Bring to a vigorous boil over high heat. Once boiling, reduce the heat to low, cover the pan, and let it simmer for approximately 15 minutes or until the quinoa has absorbed all the liquid and appears fluffy. Once done, remove from heat and fluff with a fork, then set aside.

    Prepare the Shrimp: While the quinoa is cooking, take the shrimp and pat them dry using paper towels. Season both sides of the shrimp generously with smoked paprika, oregano, salt, and pepper, ensuring an even coating.

      Sauté the Shrimp: In a large skillet, heat 2 tablespoons of olive oil over medium heat. Once hot, add the minced garlic and sauté for about 30 seconds, stirring continuously until fragrant (be careful not to burn the garlic). Then, add the seasoned shrimp to the skillet, cooking for 2-3 minutes on each side until they turn bright pink and opaque.
