Ingredients

1 pound large shrimp, peeled and deveined

1 tablespoon olive oil

3 cloves garlic, minced

1 small red bell pepper, finely chopped

1 cup water chestnuts, diced

1/2 cup fresh blueberries

2 tablespoons honey

1 tablespoon soy sauce

1 teaspoon rice vinegar

1 teaspoon sesame oil

1 tablespoon fresh ginger, grated

Salt and pepper to taste

1 head of butter lettuce, leaves separated

Chopped scallions and sesame seeds for garnish

Instructions

Prepare the Blueberry Glaze:

    - In a small saucepan set over medium heat, combine the fresh blueberries, honey, soy sauce, rice vinegar, and a pinch of salt. Stir occasionally and allow the mixture to simmer for about 5-7 minutes. This will let the blueberries burst and the sauce to thicken slightly.

      - Once thickened, strain the mixture through a fine-mesh sieve, pressing down on the solids to extract as much flavorful liquid as possible. Set the prepared blueberry glaze aside.

        Cook the Aromatics:

          - In a large skillet, heat the olive oil over medium-high heat.

            - Add the minced garlic and grated ginger, sautéing for approximately 1 minute or until they become fragrant without browning.

              Add Vegetables:

                - Introduce the finely chopped red bell pepper and diced water chestnuts to the skillet. Stir and cook for an additional 2-3 minutes, allowing the vegetables to become tender but still crisp.

                  Cook the Shrimp:

                    - Add the peeled and deveined shrimp to the skillet, seasoning them with salt and pepper. Sauté the shrimp for 3-5 minutes, or until they turn pink and opaque.

                      - Pour half of the blueberry glaze over the shrimp mixture, tossing well to evenly coat the shrimp in the sauce.

                        Assemble the Wraps:

                          - To serve, take a butter lettuce leaf and spoon a generous portion of the shrimp and vegetable mixture into the center of the leaf.

                            - Drizzle with additional blueberry glaze and finish with a sprinkle of chopped scallions and sesame seeds for an added crunch and flavor.

                              Enjoy:

                                - Serve immediately while warm for maximum freshness and flavor. These wraps make a delightful dish for any occasion!
