Shrimp Dirty Rice

1 lb large shrimp, peeled and deveined

1 ½ cups long-grain rice

3 cups chicken broth

4 cloves garlic, minced

1 tsp Cajun seasoning (adjust to taste)

½ tsp smoked paprika

1 tsp dried thyme

½ tsp black pepper

¼ tsp cayenne pepper (optional for heat)

4 oz andouille sausage, diced

2 tbsp olive oil

1 cup green onions, sliced (for garnish)

½ cup fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Rice: Begin by rinsing the long-grain rice under cold water until the water runs clear. In a medium saucepan, bring 3 cups of chicken broth to a rolling boil. Once boiling, stir in the rice, reduce the heat to low, cover, and simmer for approximately 18-20 minutes, or until the rice is tender and the liquid has been absorbed. Once cooked, fluff the rice with a fork and set aside.

    Cook the Sausage: In a large skillet or Dutch oven, add 2 tablespoons of olive oil and heat over medium heat. Once hot, add the diced andouille sausage. Cook for about 5-7 minutes until the sausage is nicely browned. After cooking, use a slotted spoon to remove the sausage from the skillet and set it aside on a plate.

      Sauté the Vegetables: Using the same skillet, without wiping it down, add the finely chopped onion, celery, and green bell pepper. Sauté these vegetables for approximately 5 minutes or until they begin to soften. Next, add the minced garlic and cook for an additional minute, or until fragrant.

        Add Seasonings: Sprinkle in the Cajun seasoning, smoked paprika, dried thyme, black pepper, and cayenne pepper (if desired). Stir the spices into the vegetable mixture and allow them to bloom for about 1-2 minutes, enhancing the flavors.

          Combine Shrimp and Sausage: Toss the peeled and deveined shrimp into the skillet. Cook for 3-4 minutes, stirring occasionally, until the shrimp turn pink and opaque. Once they are cooked, return the browned andouille sausage to the skillet, stirring to combine everything thoroughly.

            Mix in Rice: Gently fold the cooked rice into the shrimp and sausage mixture, making sure all ingredients are evenly distributed. Taste the mixture and adjust seasoning with salt, if necessary.
