1 pound fresh shrimp, peeled and deveined

2 large cucumbers

1 ripe avocado, diced

1/4 cup red onion, finely chopped

1/4 cup fresh cilantro, chopped

1 clove garlic, minced

Juice of 1 lime

1 tablespoon extra virgin olive oil

Salt and pepper, to taste

Optional: A pinch of chili flakes for an extra kick

Prepare the Shrimp: In a large pot, bring salted water to a rolling boil. Add the fresh shrimp and cook for about 3-4 minutes, or until they are pink and opaque. Drain the shrimp and transfer them to a bowl of ice water to stop the cooking process. Once cool, chop the shrimp into small, bite-sized pieces.
