Ingredients

1 lb ground turkey

2 medium sweet potatoes, peeled and diced into 1-inch cubes

1 medium onion, finely chopped

2 cloves garlic, minced

1 red bell pepper, diced

1 cup fresh spinach (or chopped kale)

1 tsp smoked paprika

1 tsp ground cumin

1 tsp dried oregano

Salt and freshly ground black pepper to taste

2 tbsp olive oil

1/2 cup chicken broth (or vegetable broth for a vegetarian option)

1/4 cup fresh parsley, chopped (for garnish)

Optional: 1/4 cup feta cheese, crumbled for topping

Instructions

Prepare the Sweet Potatoes: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced sweet potatoes along with a pinch of salt. Sauté for approximately 10 minutes, stirring occasionally, until the sweet potatoes are tender and starting to caramelize. Once cooked, remove the sweet potatoes from the skillet and set them aside on a plate.

Sauté the Aromatics: In the same skillet, add the remaining tablespoon of olive oil. Introduce the chopped onion and cook for about 3-4 minutes until it becomes translucent and soft. Next, stir in the minced garlic and cook for an additional 30 seconds, or until it becomes fragrant.

Brown the Turkey: Increase the heat slightly and add the ground turkey to the skillet. Use a spatula to break it up as it cooks. Sauté until the turkey is browned and fully cooked through, which should take about 5-7 minutes.

Add the Peppers and Spices: Once the turkey is browned, add the diced red bell pepper, smoked paprika, ground cumin, dried oregano, and season with salt and pepper to taste. Cook everything together for another 3-4 minutes until the bell peppers soften and infuse the mixture with their flavor.

Combine Ingredients: Return the sautéed sweet potatoes to the skillet. Pour in the chicken broth and then add the fresh spinach. Stir well to incorporate all the ingredients, allowing the mixture to simmer for about 5 minutes or until the spinach wilts and everything is heated through.

Finish and Serve: Remove the skillet from heat. Garnish the dish with freshly chopped parsley, and, if desired, sprinkle crumbled feta cheese on top for an extra burst of flavor. Serve warm and enjoy the delicious combination of savory turkey and sweet potatoes!
