1 pound breakfast sausage (choose either pork or turkey for your preference)

8 large eggs

2 cups milk (whole or 2% milk recommended)

1 cup shredded cheddar cheese

1 cup diced bell peppers (use a mix of colors for visual appeal)

1 cup diced onion

4 cups stale bread (preferably cubed French or Italian bread)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper to taste

1 tablespoon olive oil (or butter, for greasing the baking dish)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Set your oven to 350°F (175°C). Generously grease a 9x13-inch baking dish with olive oil or butter to prevent sticking.

    Cook the Sausage: In a large skillet, over medium heat, cook the breakfast sausage until browned and fully cooked—break it apart with a spatula as it cooks. Once done, drain any excess grease and set aside to cool slightly.

      Sauté the Vegetables: In the same skillet with the remaining sausage drippings, add the diced onion and bell peppers. Sauté until the vegetables are tender, approximately 5 to 7 minutes. Once done, remove from heat and allow to cool for a few minutes.

        Whisk the Eggs and Seasonings: In a large mixing bowl, whisk together the 8 eggs and 2 cups of milk until well combined. Stir in the garlic powder, onion powder, smoked paprika, along with salt and pepper to taste.

          Combine the Ingredients: In the prepared baking dish, evenly layer the cubed stale bread across the bottom. Follow with the cooked sausage, sautéed vegetables, and shredded cheddar cheese. Finally, pour the egg mixture evenly over the layered ingredients.

            Allow to Set: Gently toss the mixture in the baking dish to ensure that the bread cubes soak up the egg mixture. Allow the casserole to sit for 10 to 15 minutes to enhance absorption.
