9 lasagna noodles

2 cups cooked, shredded chicken breast

1 cup ricotta cheese

1 cup shredded mozzarella cheese, divided

1/2 cup grated Parmesan cheese

1 large egg

2 cups spinach (fresh or thawed frozen)

2 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon dried oregano

1 teaspoon dried basil

1/2 teaspoon salt

1/2 teaspoon black pepper

2 cups marinara sauce

Fresh basil leaves for garnish (optional)

Instructions
 

Preheat the Oven: Set your oven to 375°F (190°C) to ensure it’s ready when you’re finished assembling the roll-ups.

    Cook the Noodles: Bring a large pot of salted water to a rolling boil. Carefully add the lasagna noodles and cook according to package instructions until al dente, usually about 8 minutes. Once done, drain the noodles and lay them flat on a clean towel or parchment paper to cool.

      Prepare the Filling: In a spacious mixing bowl, combine the shredded chicken, ricotta cheese, half of the shredded mozzarella, Parmesan cheese, egg, spinach, minced garlic, olive oil, dried oregano, basil, salt, and black pepper. Use a fork or spatula to mix all the ingredients until they are well combined and creamy.

        Assemble the Roll-Ups: Take one lasagna noodle and place it on a clean, flat surface. Spoon approximately 1/4 cup of the chicken filling onto the noodle, spreading it evenly, but avoid overfilling. Carefully roll the noodle from one end to the other, forming a tube shape. Place the rolled noodle seam-side down in a greased 9x13 inch baking dish. Repeat the process with the remaining noodles and filling.
