1 tablespoon olive oil

1 large onion, thinly sliced

2 bell peppers (1 red and 1 green), sliced into strips

3 cloves garlic, finely minced

1 teaspoon dried oregano

1 teaspoon dried basil

1 teaspoon crushed red pepper flakes (optional, for heat)

Salt and pepper to taste

1 loaf of crusty hoagie rolls (4 rolls)

8 ounces provolone cheese, sliced

1 cup marinara sauce

Fresh basil leaves for garnish (optional)

Preheat the Oven: Start by preheating your oven to 375°F (190°C) to ensure it's hot and ready for baking.

    Cook the Sausage: In a large skillet, heat the Italian sausage over medium heat. Use a spatula to break the sausage apart while cooking. Sauté until the sausage is evenly browned and cooked through, about 8-10 minutes.

      Sauté the Vegetables: Add the olive oil to the skillet with the sausage. Once the sausage is partially cooked, incorporate the sliced onions and bell peppers. Sauté these vegetables for about 5-7 minutes until they soften. Then, stir in the minced garlic, oregano, basil, and crushed red pepper flakes (if using). Season with salt and pepper, and cook for another minute until everything is fragrant.

        Prepare the Hoagies: Take the hoagie rolls and carefully slice them lengthwise, being careful not to cut all the way through, so that they create a pocket. Arrange the rolls on a baking sheet.
