Ingredients

1 lb ground beef

1/2 cup breadcrumbs

1/4 cup milk

1/4 cup finely chopped onion

1 clove garlic, minced

1 large egg, beaten

1 tsp Worcestershire sauce

Salt and pepper to taste

2 tbsp olive oil (for frying)

For the Mushroom Gravy:

2 cups sliced mushrooms (such as cremini or button)

1 cup beef broth (low-sodium recommended)

1 tbsp soy sauce

1 tbsp all-purpose flour

1 tbsp unsalted butter

1/2 tsp dried thyme

Salt and pepper to taste

Instructions

Prepare the Burger Mixture: In a spacious mixing bowl, combine the ground beef, breadcrumbs, milk, chopped onion, minced garlic, beaten egg, Worcestershire sauce, salt, and pepper. Use your hands or a spatula to gently mix the ingredients until just combined, taking care not to overmix to keep the patties tender.

Form Patties: Divide the mixture into 4 equal portions (about 4 ounces each) and shape each portion into a patty, approximately 1/2 inch thick. Place the patties on a plate or cutting board and set aside.

Cook the Patties: Heat the olive oil in a large skillet over medium heat. Once the oil is shimmering, carefully add the patties to the skillet. Cook them for about 4-5 minutes on each side, or until they are nicely browned and cooked through (the internal temperature should reach 160°F). Remove the patties from the skillet and transfer them onto a plate, covering them with foil to keep warm.

Make the Mushroom Gravy: In the same skillet, without cleaning it, add the butter and sliced mushrooms. Sauté the mushrooms over medium heat for about 5 minutes, stirring occasionally, until they are browned and tender. Once the mushrooms are ready, sprinkle the flour over them and stir well to coat. Cook for an additional minute to eliminate the raw flour taste.

Add Liquids: Gradually stream in the beef broth and soy sauce, whisking continuously to avoid lumps. Add dried thyme, and season the mixture with salt and pepper to taste. Increase the heat slightly and bring the gravy to a gentle simmer, allowing it to thicken for about 3-4 minutes, stirring occasionally.

Combine Steaks and Gravy: Once the gravy has thickened to your desired consistency, return the cooked Salisbury steaks to the skillet. Spoon the rich gravy over the patties, letting them simmer together for an additional 2-3 minutes. This will allow the steaks to absorb some of that wonderful gravy flavor.

Serve: To serve, place each Salisbury steak on a plate and generously ladle the mushroom gravy over the top. This dish is perfect alongside fluffy mashed potatoes or warm rice, complemented with a side of sautéed or steamed seasonal vegetables to round out the meal.
