1 packet of active dry yeast (2 ¼ tsp)

1 tablespoon granulated sugar

4 cups all-purpose flour

1 teaspoon fine salt

¼ cup baking soda

Coarse sea salt, for sprinkling

2 tablespoons fresh rosemary, finely chopped (or 1 tablespoon dried rosemary)

1 large egg, beaten (for egg wash)

1 tablespoon melted butter (optional, for brushing on top)

Instructions
 

Activate the Yeast: In a mixing bowl, combine the warm water, granulated sugar, and yeast. Stir gently and let it sit for 5-10 minutes. You'll know the yeast is activated when it becomes foamy on the surface.

    Make the Dough: In a separate large mixing bowl, whisk together the all-purpose flour, fine salt, and chopped rosemary. Gradually pour in the activated yeast mixture, stirring until a cohesive dough starts to form. Transfer the dough onto a lightly floured surface and knead it for about 5-7 minutes, or until it’s smooth and elastic.

      Let it Rise: Place the kneaded dough into a greased bowl, ensuring it is coated on all sides. Cover the bowl with a clean kitchen towel and let it rise in a warm area for about 1 hour, or until the dough has doubled in size.

        Prepare the Baking Soda Bath: In a large pot, boil 4 cups of water and add the baking soda, stirring until dissolved. This solution will create a beautiful crust on the pretzel bites.
