1 can (15 oz) chickpeas, drained and rinsed

1 medium zucchini, diced into bite-sized pieces

1 red bell pepper, diced

1 cup cherry tomatoes, halved

1 red onion, chopped into large chunks

3 tablespoons extra virgin olive oil

Zest and juice of 1 large lemon

2 teaspoons dried dill weed (or 1 tablespoon fresh dill, finely chopped)

1 teaspoon garlic powder

1/2 teaspoon smoked paprika

Salt and freshly ground black pepper to taste

Fresh parsley, roughly chopped, for garnish (optional)
